Gingerbread Cheesecake Bites

Keto Gingerbread Cheesecake Bites – Have Butter Will Travel

Calories: 82 per bite | Serves: 30 bites | Prep: 15 minutes | Cook: 10 minutes | Total time: 50 minutes

Ingredients

  • 250 g cream cheese, softened (8 oz)
  • 1 cup almond flour
  • 1 cup desiccated coconut
  • 1/4 cup powdered erythritol (sifted)
  • 2 tbsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 50 g butter, melted (about half a stick)
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a medium bowl, combine almond flour, desiccated coconut, spices, salt and melted butter. Stir until the mixture resembles wet sand or coarse crumbs.
  3. Spread the crumb mixture on a rimmed baking sheet and bake for about 10 minutes, or until it starts to brown. Remove and let the crumbs cool completely.
  4. While the crumbs bake, beat the cream cheese, vanilla and sweetener with an electric mixer until smooth and fluffy.
  5. Reserve one cup of the baked crumbs for coating the bites.
  6. Add the remaining cooled crumbs to the cream cheese mixture and stir to combine.
  7. Chill the mixture in the fridge for about an hour to firm slightly.
  8. Using a small ice cream scoop or teaspoon, portion the mixture into small balls. Roll each ball in the reserved crumb mixture until fully coated. Repeat until you have 30 bites.
  9. Return the coated bites to the fridge to firm up. Store in an airtight container in the refrigerator.
