These 90 minute cinnamon rolls are a family favorite because they come together quickly and don’t require a long rise. They’ve been a conference tradition for us since we were first married, and once I found this quick dough recipe it became our go-to.

Ingredients

Rolls

  • 3/4 cup milk
  • 1/4 cup butter, softened
  • 3 1/4 cups all-purpose flour
  • 1 Tbsp. instant yeast
  • 1/4 cup white sugar
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 egg
  • 1 cup packed brown sugar
  • 1 Tbsp. ground cinnamon
  • 1/2 cup butter, softened (for filling)

Frosting

  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1/4 cup milk
  • 1 1/2 cups powdered sugar

Instructions

Rolls

  1. Heat the milk in a small saucepan until it bubbles, then remove from heat. Stir in the butter until melted and let cool until lukewarm.
  2. In a large bowl combine 2 1/4 cups flour, yeast, sugar and salt. Add water, egg and the milk mixture; beat well.
  3. Add the remaining flour 1/2 cup at a time, stirring after each addition. When the dough just pulls together, turn onto a lightly floured surface and knead 2–3 minutes until smooth.
  4. Cover dough with a damp cloth and let rest for 10 minutes.
  5. In a small bowl mix brown sugar, cinnamon and softened butter until spreadable.
  6. Roll dough into a 12 x 9 inch rectangle. Spread with the butter/sugar mixture. Roll up and pinch seam to seal. Cut into 12 equal rolls and place in a lightly greased baking sheet.
  7. Cover and let rise until doubled, about 30 minutes.
  8. Preheat oven to 375°F (190°C). Bake for about 20 minutes or until golden brown.

Frosting

  1. In a 2-quart saucepan melt butter over medium heat. Stir in brown sugar and bring to a boil, stirring constantly. Reduce heat and boil 2 minutes while stirring. Stir in milk and return to a boil. Remove from heat and cool to lukewarm, about 30 minutes.
  2. Gradually stir in powdered sugar (about 1/2 cup at a time) until smooth and spreadable. If frosting becomes too stiff, stir in additional milk 1 teaspoon at a time. Spread over warm rolls.

Notes

If the frosting thickens too much, add milk 1 teaspoon at a time until spreadable.
