Our 90 minute cinnamon rolls with caramel frosting come together in 90 minutes! Soft cinnamon rolls topped with a rich caramel frosting. Easy to make and always a crowd-pleaser.
I consider homemade bread my love language. I enjoy making it for family and friends and especially love eating it. These 90 minute cinnamon rolls are a family favorite because they come together quickly and don’t require a long rise. They’ve been a conference tradition for us since we were first married, and once I found this quick dough recipe it became our go-to.

Instead of attending church in person, we often stay home and watch the broadcast together. Making and sharing cinnamon rolls has become part of that experience.

90 Minute Cinnamon Rolls with Caramel Frosting

Tip: For an easier and more even filling, mix the butter, sugar and cinnamon together until it has a spreadable consistency, then spread it over the rolled-out dough. Using brown sugar in the filling makes the rolls extra gooey and flavorful.

Bake the rolls until they are golden brown and cooked through.
Can you make the cinnamon rolls ahead of time?
Yes. Prepare the rolls up to the point where they are ready to go into the oven, then freeze them. When you’re ready to bake, thaw and bake as directed.
How many rolls does this recipe make?
This recipe yields 12 cinnamon rolls with caramel frosting.
Can you use white sugar in the filling?
Yes, you can use white sugar, but brown sugar combined with butter creates a richer, gooier filling that many prefer.

The caramel frosting is a standout—thick, buttery and sweet. Once you try it, you’ll want to add it to many other baked goods.

Caramel Cinnamon Rolls
Ingredients
Rolls
- 3/4 cup milk
- 1/4 cup butter, softened
- 3 1/4 cups all-purpose flour
- 1 Tbsp. instant yeast
- 1/4 cup white sugar
- 1/2 teaspoon salt
- 1/4 cup water
- 1 egg
- 1 cup packed brown sugar
- 1 Tbsp. ground cinnamon
- 1/2 cup butter, softened (for filling)
Frosting
- 1/2 cup butter
- 1 cup packed brown sugar
- 1/4 cup milk
- 1 1/2 cups powdered sugar
Instructions
Rolls
- Heat the milk in a small saucepan until it bubbles, then remove from heat. Stir in the butter until melted and let cool until lukewarm.
- In a large bowl combine 2 1/4 cups flour, yeast, sugar and salt. Add water, egg and the milk mixture; beat well.
- Add the remaining flour 1/2 cup at a time, stirring after each addition. When the dough just pulls together, turn onto a lightly floured surface and knead 2–3 minutes until smooth.
- Cover dough with a damp cloth and let rest for 10 minutes.
- In a small bowl mix brown sugar, cinnamon and softened butter until spreadable.
- Roll dough into a 12 x 9 inch rectangle. Spread with the butter/sugar mixture. Roll up and pinch seam to seal. Cut into 12 equal rolls and place in a lightly greased baking sheet.
- Cover and let rise until doubled, about 30 minutes.
- Preheat oven to 375°F (190°C). Bake for about 20 minutes or until golden brown.
Frosting
- In a 2-quart saucepan melt butter over medium heat. Stir in brown sugar and bring to a boil, stirring constantly. Reduce heat and boil 2 minutes while stirring. Stir in milk and return to a boil. Remove from heat and cool to lukewarm, about 30 minutes.
- Gradually stir in powdered sugar (about 1/2 cup at a time) until smooth and spreadable. If frosting becomes too stiff, stir in additional milk 1 teaspoon at a time. Spread over warm rolls.
