What is this?

This dessert is an inventive twist on traditional baklava: instead of nuts and syrup, it layers a white chocolate brownie batter and a bright raspberry filling between crisp, buttery filo sheets. The contrast between the crisp filo and the soft, chocolaty center is what makes this Raspberry Brownie Baklava particularly memorable. It’s a dessert that showcases fresh raspberries and white chocolate in a decadent, shareable format.
What we love about this recipe
This raspberry baklava brings together classic flavor pairings—chocolate and raspberries—in a format that’s easy to assemble and appealing for gatherings. It’s a modern take on a centuries-old pastry, combining the flaky texture of filo with a rich, creamy brownie layer and sweet-tart raspberry spread. The recipe is straightforward and can be completed in about an hour, making it practical for weeknight baking or special occasions.
Key reasons to try this recipe:
- Uses fresh raspberries for vibrant flavor and color.
- Pairs white chocolate with raspberries for a timeless combination.
- Assembles quickly and bakes in under an hour.
- Offers an impressive presentation while remaining approachable to make.

I first made this recipe when invited to create a raspberry-focused dessert. The raspberries reminded me of childhood summers spent picking fruit on the family farm—sweet, fleeting moments that are perfect to capture in a dessert. Whether you pick raspberries from your own garden or buy fresh berries from the store, their brightness lifts this baklava and balances the richness of the white chocolate brownie batter.

Baklava has deep culinary roots, but combining it with white chocolate and raspberries is a contemporary twist that works wonderfully. The layers keep their structure after baking, and a drizzle of melted white chocolate on top provides a glossy finish and an extra touch of indulgence. Garnish with fresh raspberries and a dusting of powdered sugar to enhance both the look and flavor.
This Raspberry Brownie Baklava is an excellent choice for celebrations, potlucks, or anytime you want a dessert that looks impressive but is relatively simple to prepare. If fresh raspberries are in season, use them—if not, look for high-quality fresh berries at your market. The recipe scales nicely and makes a generous batch to share.

Raspberry Brownie Baklava
Prep: 15 mins | Cook: 35 mins | Total: 50 mins | Yield: 24 servings
By: Dan from Platter Talk
Ingredients
- 4 oz fresh raspberries
For the White Chocolate Brownie Batter
- 6 tablespoons unsalted butter
- 4 ounces white chocolate baking squares
- 1 cup granulated sugar
- 2 large eggs, lightly beaten
- 1 teaspoon vanilla
- 1/2 cup all-purpose flour
For the Baklava
- 1 (16 ounce) package thawed filo dough
- 1 cup (2 sticks) unsalted butter, melted
- 4 ounces white chocolate baking squares (for topping)
- Fresh raspberries for garnish
- 1 tablespoon powdered sugar for garnish (optional)
Instructions
- Preheat oven to 350°F.
- For the brownie batter: melt the butter and white chocolate together in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. Let cool slightly, then stir in the sugar. Beat in the eggs and vanilla until combined, then fold in the flour.
- In a separate bowl, mash the raspberries to a spreadable consistency.
- Roll the filo dough out onto a clean work surface. Place a 9×13-inch baking dish in the center of the filo sheets and cut around it so the sheets fit the dish. Keep the remaining filo covered with a damp cloth while assembling to prevent drying.
- Spread melted butter on the bottom and sides of the baking dish. Place one sheet of filo in the bottom, brush generously with melted butter, and repeat with a total of seven sheets.
- Spread the white chocolate brownie batter evenly over the layered filo in the bottom of the dish.
- Layer six more sheets of filo on top of the brownie layer, brushing each sheet with melted butter.
- Spread the mashed raspberries evenly over these middle filo layers.
- Top with the remaining filo sheets, brushing each sheet generously with melted butter.
- Using a sharp knife, cut the unbaked baklava into 24 squares. Brush the top with any remaining melted butter.
- Bake for 30–35 minutes, or until the baklava is golden and beginning to crisp on top.
- While the baklava bakes, melt the remaining white chocolate in the microwave or over a double boiler until smooth.
- Remove the baklava from the oven and evenly drizzle the melted white chocolate over the top.
- Garnish with fresh raspberries and a light dusting of powdered sugar, if desired. Allow to cool slightly before serving so layers set.
