These Sugar Pie Squares are buttery, gooey, caramelly and absolutely divine. They may look humble, but their rich brown sugar and vanilla filling on a shortbread-style crust delivers impressive flavor that quickly becomes a family favorite.
Sugar Pie Squares
I first found this recipe in a magazine years ago and it has earned a permanent place in our dessert rotation. When a recipe is simple and relies on a few pantry staples, I recommend using the best possible ingredients you can—high-quality butter and pure vanilla extract make a noticeable difference in the final result.
The bars marry a tender, shortbread-like crust with an irresistibly gooey, caramelized brown sugar filling. The texture is luxuriously soft but still holds together thanks to a touch of cornstarch in the filling. After baking, the bars need time to cool and chill so the filling sets properly; the wait is worth it.

Sugar Pie Squares
These bars are deceptively simple to make and require straightforward steps: prepare a shortbread-style crust, bake it briefly, whisk together a creamy brown sugar filling, pour over the par-baked crust, and finish baking until the center is set but still slightly jiggly. Cool completely, then chill for several hours before slicing. The final squares are rich, caramel-colored, and deeply flavored with brown sugar and vanilla.
Ingredients
For the Crust:
- 1½ cups all-purpose flour
- 2 Tbsp granulated white sugar
- ½ tsp salt
- ½ cup unsalted butter, cold and cubed
- 1 tsp pure vanilla extract
For the Filling:
- 1½ cups light brown sugar, firmly packed
- 2 large eggs, at room temperature
- ¼ cup heavy whipping cream
- 3 Tbsp unsalted butter, melted and cooled
- 2 Tbsp cornstarch
- 2 tsp pure vanilla extract
- ¼ tsp salt
Equipment
- Food processor (recommended for quick, even mixing)
- 8-inch square light metal baking pan
- Parchment paper
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch square light metal baking pan with parchment paper, letting the paper extend over the sides for easy removal. Lightly spray the parchment with cooking spray and set the pan aside.
- Make the crust: In a food processor combine the flour, granulated sugar, and salt. Pulse until combined. Add the cold, cubed butter and vanilla extract, pulsing until the mixture resembles coarse crumbs. Pour the mixture into the prepared pan and press into an even layer. Bake for 10 minutes, then remove from the oven but keep the oven on.
- While the crust bakes, whisk together the filling: in a large bowl combine the brown sugar, eggs, heavy whipping cream, melted cooled butter, cornstarch, vanilla extract, and salt. Whisk until smooth and well combined.
- Pour the filling over the hot crust and return the pan to the oven. Bake until the top is set but still slightly jiggly in the center, about 25–30 minutes. The filling may bubble around the edges and deepen in color; some jiggle in the center is normal, but it should not be liquid or sloshing.
- Allow the bars to cool completely at room temperature. Once cooled, cover the pan with plastic wrap or foil and refrigerate for at least 4–6 hours (overnight is ideal) so the filling fully sets and slices cleanly.
- When chilled and set, lift the bars from the pan using the parchment overhang and cut into 16 squares. Serve chilled or at cool room temperature for the best texture.

Tips and Notes
- Use high-quality butter and pure vanilla extract—these simple bars shine when each ingredient tastes its best.
- Cold butter in the crust yields a tender, shortbread-like texture. Avoid over-processing the dough into a paste; you want coarse crumbs before pressing into the pan.
- The cornstarch in the filling helps stabilize the custardy texture so squares hold together after chilling.
- Chill time is essential: slicing too early will cause the bars to be too soft and messy. Plan ahead to allow at least 4–6 hours of refrigeration.

These Sugar Pie Squares are a crowd-pleasing dessert—rich, comforting, and full of warm caramel and vanilla flavor. They’re easy enough for a weekday treat yet elegant enough for holiday gatherings. Give them time to chill, then enjoy the reward: irresistible, gooey squares that are truly memorable.
Have a super sweet day!
