Broiling is my new go-to for getting that crisp, toasted cheese you expect from a pizza oven. Until now I usually baked or grilled pizza, but broiling delivers a quick, golden finish that mimics that oven-fresh texture—perfect for the months when grilling isn’t an option.

These bagel pizzas come together in minutes and quickly became a weeknight favorite in my house. My son asked for them repeatedly—lunch and dinner almost every day—because they’re that easy and satisfying.

I used leftover rotisserie chicken and simple pantry ingredients, which makes these bagel pizzas a great option for quick lunches, easy dinners, or kid-friendly meals. They’re also adaptable—swap in different vegetables or proteins to suit your family’s tastes.

Ingredients

  • 2 Plain bagels, sliced in half
  • 1/2 cup Marinara sauce
  • 1 cup Shredded rotisserie chicken
  • 1 cup Shredded mozzarella cheese

Instructions

  • Preheat the broiler on low.
  • Place the bagel halves, cut side up, on a greased baking sheet.
  • Broil for 2 minutes, then remove.
  • Spread marinara evenly on each bagel, top with shredded chicken, and sprinkle with mozzarella.
  • Return to the broiler for about 2 minutes, or until the cheese is melted and lightly toasted. Watch closely to prevent burning.
