Ingredients
- 2/3 cup packed brown sugar
- 1/2 cup whole wheat pastry flour
- 1/3 cup cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 1/3 cup unsweetened applesauce
- 2 tablespoons canola oil
- 1 teaspoon vanilla
- 1–2 teaspoons granulated sugar for topping
Instructions
- Preheat oven to 350°F.
- In a large bowl, whisk together brown sugar, whole wheat pastry flour, cocoa powder, baking powder, and salt until evenly combined and the brown sugar is broken up.
- Add the eggs, applesauce, canola oil, and vanilla. Stir just until combined—avoid over-mixing.
- Pour the batter into an ungreased 8×8-inch pan.
- Bake about 28–33 minutes, until a toothpick comes out with a few moist crumbs. If you bake longer until the toothpick is completely clean, the brownies will be drier and more cake-like.
- Remove the pan to a cooling rack and immediately sprinkle the top with granulated sugar for a light crunch and extra sweetness.
- Allow brownies to cool before cutting.
