Ingredients

  • 2/3 cup packed brown sugar
  • 1/2 cup whole wheat pastry flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/3 cup unsweetened applesauce
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla
  • 1–2 teaspoons granulated sugar for topping

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together brown sugar, whole wheat pastry flour, cocoa powder, baking powder, and salt until evenly combined and the brown sugar is broken up.
  3. Add the eggs, applesauce, canola oil, and vanilla. Stir just until combined—avoid over-mixing.
  4. Pour the batter into an ungreased 8×8-inch pan.
  5. Bake about 28–33 minutes, until a toothpick comes out with a few moist crumbs. If you bake longer until the toothpick is completely clean, the brownies will be drier and more cake-like.
  6. Remove the pan to a cooling rack and immediately sprinkle the top with granulated sugar for a light crunch and extra sweetness.
  7. Allow brownies to cool before cutting.
