Ingredients

  • 1 cup onions, diced
  • 1 cup red bell peppers, diced
  • 1 pound extra lean ground beef or 99% fat-free ground turkey, see shopping tips
  • 1 (16 oz.) bag cauliflower rice, see shopping tips
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 cup ketchup
  • cup water
  • 2 tablespoons tomato paste, see shopping tips
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • ¼ teaspoon red pepper flakes

Instructions

  • Place the diced onions and red bell peppers on a microwave-safe plate or bowl. Microwave for about 3 minutes, until they soften. Set aside.
  • Heat a large nonstick skillet over medium-high. Add the ground beef (or turkey) and cook until browned, breaking it into small pieces as it cooks. Stir in the cauliflower rice, olive oil, and minced garlic. Cook and stir for about 5 minutes.
  • Add the ketchup, water, tomato paste, mustard, Worcestershire sauce, and red pepper flakes. Mix thoroughly, then simmer for about 5 minutes, or until the vegetables are tender, stirring often so the mixture doesn’t stick.
  • Serve the sloppy joe cauliflower rice in bowls. If you like, top with shredded lettuce and diced tomatoes for extra freshness.
