S’mores waffle sticks are a simple, kid-approved breakfast treat. Graham-cracker–flavored waffles are finished with swirls of marshmallow fluff and a silky chocolate ganache for a breakfast that tastes like dessert any time of day.

I love s’mores and always have. The crunchy graham cracker and chocolate pairing is irresistible, and a toasted marshmallow pushes it over the top. These days I enjoy them a bit less frequently than I once did, but I still crave that classic combination—and I’ll take any excuse to turn it into a special breakfast.
Today is Galentine’s Day, which to me means waffles and celebrating the important women in my life. In the past I’ve shared s’mores in cookies, cheesecakes, and brownies, and this year I decided to make s’mores waffle sticks for a festive brunch. They’re fun to make, easy to serve, and perfect for sharing.

Galentine’s Day is a chance to honor the strong women in our lives. This year I celebrated my Aunt Lisa—someone who’s shown remarkable strength despite criticism and difficult circumstances. She doesn’t always get the recognition she deserves, so making a special brunch of buttery s’mores waffle sticks felt like the perfect way to say thank you and show appreciation for everything she’s been through.

S’mores Waffle Sticks

Ingredients
- ¾ cup graham cracker flour*
- ⅓ cup unbleached all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons sugar
- 1 cup buttermilk room temperature
- 2 large eggs room temperature
- 4 tablespoons unsalted butter melted
- 1 oz dark chocolate melted
- 2 tablespoons heavy cream room temperature
- 3 – 4 tablespoons marshmallow fluff
Instructions

Preheat your waffle iron according to the manufacturer’s instructions. Preheat the oven to 200°F (about 95°C).

In a medium bowl, combine graham cracker flour, all-purpose flour, baking powder, salt, and sugar. Set aside.

In a separate bowl, whisk together buttermilk and eggs until well combined, then stir in the melted butter.

Fold the wet ingredients into the dry ingredients and mix until just combined. Small lumps are fine—don’t overmix.

Generously grease the waffle iron and add batter to partially fill each well. If you want a popsicle-stick handle, place a popsicle stick over the batter so a few inches stick out; for best adhesion, coat the stick with a bit of batter before placing it. Close the iron and cook according to the manufacturer’s directions.

Transfer finished waffle sticks to a wire rack and keep them warm in the preheated oven while you finish cooking the rest.

Stir the melted dark chocolate together with the heavy cream until smooth, then drizzle the ganache over the warm waffle sticks.

Warm the marshmallow fluff in the microwave for about 15 seconds to loosen it, then drizzle or spoon it over the waffle sticks.

Serve immediately while warm and gooey.
