Cookie Dough Frosting Recipe: Scoopable No-Bake Cake Frosting

I’ve been tagged a few times to list five things people don’t know about me. I usually resist these tags, but with Valentine’s Day approaching I thought it would be a nice chance for us to get to know each other a bit better.

5 Things You Probably Don’t Know About Me

1) I have a very strong sense of smell: I can pick up scents from far away — like what someone a few treadmills over had for breakfast or the cologne someone wore on a date. That heightened sense can make small, enclosed spaces like cars or airplanes challenging. When I cook something with a strong aroma in the slow cooker, I often put it in the garage, because otherwise the scent will wake me up at night even if the bedroom is upstairs and the kitchen is downstairs. I think this sensitivity is part of why I love food so much — I can detect cooking smells from a long distance.

2) I’m the youngest of ten siblings and have 38 nieces and nephews.

3) I always sleep with my hair down and never on my stomach. Growing up, my sisters warned me that a ponytail while sleeping would make my hair fall out and that sleeping on my stomach would flatten me. Old advice, but some habits stuck.

4) My biggest pet peeve is when people don’t look you in the eye while they’re talking to you. I value directness and connection, and eye contact matters to me.

5) I have a strong memory. I used to remember everything — names from decades ago, what I ate at specific events, and birthdays. Parenting has dulled that a bit, but I still retain a lot of details. Sometimes I downplay how much I remember because it can make people uncomfortable if you recall too much. I genuinely enjoy learning about others and remembering those details.

You probably already know I have a weakness for cookie dough. I’ve made this cookie dough frosting recipe several times. I originally found it on Sally’s Baking Addiction, and everything from her site that I’ve tried has been excellent. My husband told me to stop testing other versions because this one is perfect. He’s been asked for the recipe so often he encouraged me to post it. Don’t worry — this version is eggless.

Cookie Dough Frosting

Ingredients

  

  • 1/2 cup 1 stick unsalted butter, softened to room temp
  • 3/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1/2 teaspoon salt
  • 4 Tablespoons milk
  • 1 cup mini chocolate chips

Instructions

 

  • Using a mixer, cream together the butter and brown sugar on medium speed. Add the vanilla and beat until combined. Gradually add the flour and salt and mix until incorporated. Add the milk a little at a time until you reach the desired consistency, then beat until the frosting is light and fluffy. Gently fold in the mini chocolate chips. Spread or spoon onto cooled cupcakes — I prefer a thicker layer. Store any leftovers in the refrigerator.

Notes

For a scoopable cookie dough texture, use less milk. Add more milk to thin the mixture into a dip.
