Spring Chicken Sandwich with Avocado Mayo

Ingredients:
1 grilled chicken breast
2 slices Pepperidge Farm Farmhouse® Hearty White Bread
3 cucumber slices
2 tomato slices
1 slice Swiss cheese
1/4 cup sprouts
2 slices cooked bacon
Avocado Mayo:
1 avocado
2 tablespoons lemon juice
1/4 cup olive oil
1/2 teaspoon salt
Instructions:
1. Grill the chicken breast to your preferred doneness and let it rest a few minutes before slicing.
2. Make the avocado mayo: combine the avocado, lemon juice, olive oil, and salt in a blender or food processor. Blend on high until thick and creamy. Adjust salt and lemon to taste.
3. Toast the slices of Pepperidge Farm Farmhouse Hearty White Bread until golden.
4. Assemble: spread avocado mayo on both pieces of toast. Layer the sliced chicken, Swiss cheese, tomato, cucumber, bacon, and sprouts. Cut in half and serve.
