Oven-Roasted Tomatoes with Fresh Basil

These easy baked basil tomatoes are the perfect summer side dish.

It was 7pm on a weekday. I’d just finished CrossFit and got home to Ginger, my dog, waiting at the door, tail wagging and nudging me to take her for a walk. As we climbed the steep hill in the neighborhood (it feels like Mt. Everest), I remembered I had forgotten to defrost the chicken I planned for dinner.

That’s pretty much the story of my life: I can remember birthdays for years, but defrosting protein somehow slips my mind. Thirty minutes later we returned, both hungry. Ginger nosed the pantry while I stared into the fridge, trying to come up with a quick plan.

Luckily, I had several of the new Bumble Bee SuperFresh™ seafood entrees in the freezer. I picked the Spicy Shrimp Romanesco, boiled soba noodles, steamed broccoli, and had a flavorful dinner on the table in under 30 minutes.

Baked Basil Tomatoes

These easy baked basil tomatoes are the perfect summer side dish.

Ingredients 

  • 3 large vine ripened tomatoes, sliced in half
  • 1/2 cup panko breadcrumbs
  • 1/4 cup almonds
  • 1 tablespoon sliced shallots
  • 1 tablespoon basil leaves
  • extra virgin olive oil for drizzling
  • salt & pepper

Instructions 

  • Preheat the oven to 400°F (200°C).
  • Arrange the tomato halves in a baking dish, cut side up.
  • Place the almonds in a food processor and pulse until they match the texture and size of the panko breadcrumbs.
  • Add the panko, shallots, and basil and pulse a few times until combined.
  • Spoon the breadcrumb mixture over each tomato half.
  • Drizzle with extra virgin olive oil and season with salt and pepper.
  • Bake for 20 minutes.
  • Switch the oven to high broil and broil for 1–2 minutes until the tops are golden and crispy—watch closely to avoid burning.
