Ingredients

  • 1 1/2 cups pears, finely diced
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 3/4 cup plain Greek yogurt
  • 1/4 cup coconut oil (or butter)
  • 1 egg
  • 3 tbsp brown sugar
  • 1 tbsp fresh ginger, finely chopped
  • 1 tsp baking powder
  • 1 tsp baking soda

Instructions

  1. Preheat the oven to 425°F (220°C). Line a muffin tin with liners or spray the pan well.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, and a pinch of nutmeg. Stir in the melted coconut oil, Greek yogurt, egg, and chopped fresh ginger until just combined. Gently fold in the diced pears.
  3. Spoon the batter into the prepared muffin cups. Reduce the oven temperature to 400°F (200°C) and bake for 23–25 minutes, until a toothpick inserted in the center comes out clean and the tops are golden. Let cool slightly before serving.
