Peanut Butter Oatmeal Cookie Dough Bites: No-Bake Snack Bites

These cookie dough bites are one of my favorite snacks. They’re simple to make, wholesome, and truly taste like a spoonful of cookie dough. I love that they satisfy a sweet craving while using nourishing ingredients, so you can enjoy a dessert-like treat without the guilt.

My kids call these “treat balls” and always ask for them. They feel like a special dessert even though they’re packed with oats, almond flour, and good fats—win for everyone.

Ingredients you’ll need:

  • Oats
  • Almond flour
  • Maple syrup
  • Coconut oil
  • Cinnamon
  • Salt
  • Vanilla
  • Peanut butter

These bites come together quickly in a food processor. Start by pulsing the oats until they form a coarse flour, then add the remaining ingredients and blend until the mixture forms a soft, cohesive dough. Scoop by tablespoon, roll into balls, and chill until set.

Tip: I like to microwave a bite for 8–10 seconds before eating so it’s just a bit warm, but they’re delicious straight from the fridge too.

Ingredients

  • 1 cup rolled oats
  • 1 1/2 cups almond flour
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, microwaved until just melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 tablespoons peanut butter

Instructions

  1. Add the oats to a food processor and blend about 10 seconds until they become a coarse flour.
  2. Add the almond flour, maple syrup, melted coconut oil, cinnamon, salt, vanilla, and peanut butter.
  3. Blend until the mixture comes together into a soft dough that holds its shape.
  4. Scoop by tablespoon, roll into balls, place in a sealed container, and refrigerate until firm.

Notes

I like to warm a ball in the microwave for 8–10 seconds so it’s slightly soft, but they’re just as tasty chilled.
