Hearty Slow Cooker Kielbasa Soup Recipe

Crock Pot Kielbasa Soup recipe

This slow-cooker soup is loaded with smoked kielbasa, tender potato chunks and sliced carrots.

As it simmers in the crock pot the potatoes soak up the smoky flavor of the sausage and the broth becomes rich and satisfying from all the ingredients cooking together.

Ingredients

I like to start most homemade soups with diced onion, plenty of minced garlic and a couple of bay leaves for depth of flavor.

  • Smoked sausage: Smoked kielbasa is widely available and budget friendly.
  • Potatoes: Any variety works — just cut them into cubes so they soften evenly in the slow cooker.
  • Soup vegetables: Onion, garlic and carrots add classic savory flavor. If needed, substitute onion or garlic powder for fresh.
  • Canned beans: Cannellini or great northern beans work well and add a creamy texture.
  • Canned tomatoes: Use diced, crushed or whole tomatoes (chopped). Fresh diced tomatoes (about 1½ cups) also work.
  • Seasonings: Bay leaves are essential for homemade soups. Finish with salt and pepper to taste.

Let’s make soup!

Slice the kielbasa and add the rounds to the crock pot.

Peel and cube the potatoes — cubed pieces hold up well during long, slow cooking. Slice the carrots and add them to the pot.

Dice the onion and mince the garlic, then add both to the crock pot.

Drain and rinse the canned beans before adding. Pour in the canned tomatoes and add the bay leaves, salt and pepper.

Pour in the chicken broth, stir everything gently, cover and cook for 4 hours on high or 6–8 hours on low.

Ingredients  

  • 1 lb smoked kielbasa sausage (cut into rounds)
  • 1 lb potatoes (peeled, rinsed and diced)
  • 1 large carrot (peeled, rinsed and sliced)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 15 oz can cannellini beans (drained and rinsed)
  • 14.5 oz can diced tomatoes
  • 2 large bay leaves
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 cups chicken broth

Instructions 

  • Slice the kielbasa and place it in the crock pot.
  • Peel and cube the potatoes and slice the carrot, then add them to the crock pot.
  • Chop the onion and mince the garlic, then add both to the crock pot.
  • Add the drained beans, tomatoes, bay leaves, salt, pepper and chicken broth to the 6–7 quart crock pot.
  • Cover and cook 4 hours on high or 6–8 hours on low, until the potatoes are tender and flavors are melded.
