I’m a fan of Taco Bell, and one of their most underrated items has always been the potato offerings. The Spicy Potato Tacos, Cheesy Potato Grillers and, of course, the Cheesy Fiesta Potatoes are all comfort-food perfect. When the potatoes disappeared from the menu, I developed a home-friendly copycat so I can satisfy that craving anytime.

What are Fiesta Potatoes?

Cheesy Fiesta Potatoes are a Taco Bell side made from seasoned, crispy potato bites topped with warm nacho cheese and a dollop of sour cream. This recipe recreates that combination with simple ingredients and an air fryer for great texture and fast results.

Ingredients

Gather these items:

  • Potatoes – 2 large russets work best for a fluffy interior and crisp edges.
  • Vegetable oil – about 1/4 cup; any light oil will do.
  • Taco seasoning – a 1 oz (28 g) packet for that familiar flavor.
  • Light sour cream – roughly 1/2 cup to finish the bowls.
  • Nacho cheese – about 1 cup; a store-bought nacho cheese sauce keeps this close to the original.
  • Scallions – 2, chopped for garnish (optional).

How to Make

Start by washing and drying the potatoes. Cut them into 1-inch bite-sized pieces so they cook evenly.

Toss the potato pieces in a large bowl with the oil until they’re all coated. Sprinkle in the taco seasoning and toss again to distribute the spices evenly.

Place the potatoes in a single layer in your air fryer basket. Air fry at 400°F (200°C) for 10 minutes. Shake the basket, then continue cooking at 400°F for another 5–10 minutes, until the potatoes are fork-tender and crisp on the outside.

Divide the cooked potatoes into four small bowls or ramekins. Warm the nacho cheese in the microwave for about 30 seconds or until heated through, then spoon it evenly over the potatoes. Add equal portions of sour cream to each bowl and finish with chopped scallions.

Serve immediately and enjoy.

Oven Method

If you don’t have an air fryer, preheat the oven to 425°F (220°C). Prep the potatoes the same way, spread them on a foil-lined baking sheet, and bake for about 30 minutes, turning once halfway through, until crispy and tender. Top as instructed above.

Storing Leftovers

Store any leftover potatoes before adding cheese or sour cream. Place untopped cooked potatoes in an airtight container for up to 4 days. Reheat in the air fryer until warm and crisp, then add nacho cheese and sour cream before serving.

Extra Topping Ideas

If you want to turn these into a fuller meal, try any of the following toppings:

  • Seasoned ground beef
  • Pulled chicken or pork
  • Guacamole
  • Salsa
  • Pickled or fresh jalapeños
  • Red onion
  • Cilantro
  • Black beans

Tips and Tricks

  • Keep the skins on for extra texture and crispiness—no need to peel the potatoes.
  • Homemade nacho cheese can be used, but a store-bought sauce gives a flavor closer to the fast-food version. Shredded cheese is an easy alternative.
  • For an easy, mess-free prep, toss the potatoes, oil and seasoning together in a large zip-top bag before transferring to the air fryer or baking sheet.
