Breadcrumbs
Breadcrumbs play a key role in great meatballs. Use panko or regular Italian breadcrumbs—either works. Their primary job is to absorb meat juices and moisture as the meatballs cook. That prevents dry, dense meatballs and helps yield a tender, juicy interior that holds together well.

Seasoning is essential. Without it, ground beef tastes flat. I keep the seasoning simple—salt, garlic powder, and black pepper. These let the beef and cheese shine. Grated Parmesan

- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, sliced
- 2 cans crushed tomatoes (28 oz each)
- basil leaves
- 1 tsp salt
- 1 tbsp sugar
- 1 loaf bread
- fresh mozzarella
Instructions
- In a bowl, combine all the meatball ingredients: ground beef, breadcrumbs, chopped parsley, egg, salt, garlic powder, black pepper, grated garlic, and grated parmesan. Mix until just combined—avoid overworking the meat.
- Shape the mixture into roughly 100 g meatballs. Aim for uniform size so they cook evenly.
- Heat 1 tablespoon olive oil in a large pot over medium-high heat. Sear the meatballs for about 2 minutes per side to brown them, then remove. They should not be cooked through at this stage.
- Add another tablespoon of olive oil to the pot. Sauté the diced onion and sliced garlic for about 1 minute until fragrant.
- Pour in the crushed tomatoes, add basil leaves, 1 tsp salt, and 1 tbsp sugar. Stir and bring to a gentle simmer.
- Return the seared meatballs to the sauce. Cover and simmer over medium heat for 30 minutes, until the meatballs are fully cooked and tender, and the sauce has mellowed.
- Split the loaf of bread lengthwise. If you prefer, scoop a bit of the soft interior from one side to make room for the meatballs so the sandwich isn’t overcrowded.

Layer sliced fresh mozzarella on one side of the loaf. Bake or air-fry at 400°F (200°C) for about 5 minutes, or until the cheese has melted and is slightly bubbly.

- Assemble the sub: spoon in an appropriate amount of meatballs and sauce, add extra basil leaves, and finish with more grated parmesan. Close the loaf, slice into portions, and serve while hot.
