  • 2 Tbs coconut flour

  • 2 1/2 Tbs cocoa powder
  • 1/4 cup chocolate chips

Cherry Compote ingredients:

  • 3 cups pitted and sliced cherries

Make the cherry compote.

  • Combine 3 cups sliced, pitted cherries with 2 tsp honey and 2 tsp lemon juice in a pan. Heat over medium to medium-high and simmer for about 10 minutes until saucy. Set aside.

Next, make the waffle batter.

  • In a large bowl, combine 1 cup diced cherries, eggs, olive oil, unsweetened almond milk, maple syrup, and vanilla. Beat with a handheld mixer on high for about 1.5 minutes until combined and slightly frothy.
