
Have you heard of haystacks? I hadn’t until I met my husband. It was a staple of his childhood and a popular lunch at his school.
So what is a haystack? Think of it like a taco without the meat — a layered, crunchy, and satisfying meal made mostly from simple pantry and fridge ingredients.
I wasn’t convinced at first, but after tweaking the proportions and ingredients, I discovered how tasty and convenient haystacks can be.
My daughters love them so much they often ask for haystacks in their school lunches. They’ve also become a favorite on busy weeknights when you need dinner on the table fast — this meal really can be ready in about 15 minutes.
The basic components are Fritos, rice (I prefer basmati), black beans, shredded cheese, lettuce, sour cream, tomatoes, and taco sauce or salsa.

There’s very little cooking involved: just prepare the rice, warm the beans, and chop the lettuce and tomatoes.
Any white rice will work, but basmati adds a pleasant nutty, buttery flavor that deepens the overall taste compared with plain white rice.
Once the rice is cooked and the beans are warmed, you’re ready to assemble and eat.
We joke at our house about the “correct” layering technique. In reality you can mix everything together, but for a neat presentation the order I recommend is:
Fritos on the bottom, then rice, warmed black beans, shredded cheese, lettuce, tomato, sour cream, and taco sauce.

Haystacks — My Way!
Ingredients:
- Fritos
- Basmati rice (or any white rice)
- Black chili beans (canned)
- Shredded cheese
- Lettuce, chopped
- Tomato, diced
- Sour cream
- Taco sauce or salsa
Directions:
- Cook rice according to package instructions.
- Warm black beans in a saucepan until heated through.
- Assemble each haystack: start with a base of Fritos, add a scoop of rice, top with warm black beans and shredded cheese, then finish with lettuce, tomato, a dollop of sour cream, and a drizzle of taco sauce or salsa.
This dish is flexible — you can mix the layers before eating or leave them layered for presentation. Add any extra toppings you like, such as diced onions, cilantro, or avocado, for more flavor and texture.
Extra tip: Haystacks travel well and make a great packed lunch. Reheat the rice and beans and place them in a thermos to stay warm. Pack the lettuce, tomatoes, and crunchy Fritos separately and assemble when ready to eat. It’s an easy, delicious option for work or school.
