Sheet-Pan Cranberry Chicken Sausage Dinner

Sheet Pan Cranberry Chicken Sausage is a flavorful, healthy fall dinner scented with cranberries, apples, and cinnamon. Made on a single sheet pan, it requires minimal prep and delivers maximum flavor.

Sheet pan dinners are my go-to: quick to assemble, simple to bake, and a breeze to clean. This Sheet Pan Cranberry Chicken Sausage recipe is a perfect fall example — bright, comforting, and ready in about 30 minutes with only one pan to wash.

The idea for this combination came from my mother, who raved about a cranberry chicken sausage she’d found at Aldi and how she roasted it with vegetables for an easy weeknight meal. I don’t shop near an Aldi, so I adapted the concept using a sweet apple chicken sausage I can find locally. You can use your favorite brand; I like a lightly sweet chicken sausage because it balances beautifully with tart cranberries and savory onions.

For produce, I chose a colorful mix of classic fall ingredients: diced sweet potatoes, fresh cranberries, apple slices, and sweet onion wedges. The natural sweetness of the apples and sweet potatoes pairs well with the tang of the cranberries and the savory sausage. Because these ingredients have so much flavor on their own, I keep the seasoning simple: a drizzle of olive oil, salt, pepper, and a pinch of cinnamon to enhance the fall notes.

Everything roasts together on a single sheet pan, cooking quickly while developing caramelized edges and a delightful mix of textures. Serve it on its own or alongside rice for a more substantial meal. This recipe is an easy family favorite for chilly evenings.

TIPS & TRICKS:

  • You can use any flavored chicken sausage you prefer. Sweet apple or cranberry varieties work especially well with the fruit and sweet potato.
  • Serve with a side of rice or a grain of your choice to round out the meal.

Ingredients

  • 3 medium sweet potatoes, peeled & diced small*
  • 6 ounces fresh cranberries (about 1 1/2 cups)
  • 1 large apple, sliced
  • 1 medium sweet onion, sliced in wedges
  • 1 pack sweet apple or cranberry flavored chicken sausage, sliced
  • 1 tablespoon olive oil
  • Salt, pepper, & cinnamon to taste

Instructions

  1. Preheat oven to 425º F.
  2. On a sheet pan, combine the diced sweet potatoes, cranberries, apple slices, onion wedges, and sliced sausages. Drizzle with olive oil, then sprinkle with salt, pepper, and a light dusting of cinnamon. Toss to coat evenly.
  3. Bake for 25–30 minutes, or until the sweet potatoes are tender and edges are caramelized. Serve immediately.

Notes

*Aim to dice the sweet potatoes roughly the size of a cranberry so everything cooks evenly.
