Fire and Ice Watermelon Salsa
A bright, spicy-sweet salsa that pairs perfectly with warm tortilla chips and makes a fresh topping for grilled chicken or fish.

Ingredients
- 3 c. cold watermelon seeded and chopped
- 1/2 c. green bell pepper chopped
- 2 T. lime juice
- 1 T. fresh cilantro chopped
- 2 T. green onions chopped
- 1-2 T. jalapeño pepper seeded and finely diced
- 1/2 tsp. garlic salt
Instructions

In a large bowl, gently combine the chilled watermelon, chopped green pepper, lime juice, cilantro, green onions, diced jalapeño and garlic salt. Mix carefully so the watermelon pieces keep their shape.

Transfer the salsa to a serving bowl or to a hollowed-out watermelon half for a festive presentation. Chill for 1 hour to let the flavors meld.

Cook’s note: When handling and seeding jalapeños, consider wearing gloves to avoid skin irritation from the capsaicin.
