Fire and Ice Watermelon Salsa

A bright, spicy-sweet salsa that pairs perfectly with warm tortilla chips and makes a fresh topping for grilled chicken or fish.

Ingredients

  • 3 c. cold watermelon seeded and chopped
  • 1/2 c. green bell pepper chopped
  • 2 T. lime juice
  • 1 T. fresh cilantro chopped
  • 2 T. green onions chopped
  • 1-2 T. jalapeño pepper seeded and finely diced
  • 1/2 tsp. garlic salt

Instructions

  • In a large bowl, gently combine the chilled watermelon, chopped green pepper, lime juice, cilantro, green onions, diced jalapeño and garlic salt. Mix carefully so the watermelon pieces keep their shape.
  • Transfer the salsa to a serving bowl or to a hollowed-out watermelon half for a festive presentation. Chill for 1 hour to let the flavors meld.
  • Cook’s note: When handling and seeding jalapeños, consider wearing gloves to avoid skin irritation from the capsaicin.
